The unit is designed for incorporating water-soluble food additives into bulk products using a vacuum method, with the product submerged in brine. The entire vacuum cycle for each batch is fully automated, but manual operation is also possible. The brine supply and drainage pumps, as well as the vacuum pump, are made of chemically resistant materials. The entire structure is manufactured from AISI 304 food-grade stainless steel.
The unit consists of 2 parts:
1 — AV DV-1000 (vacuum unit) — this is where the magic happens:
We create conditions in which the product naturally absorbs the brine.
Thanks to the vacuum, air is drawn out of the product and replaced with brine — but that’s not all. When we equalize the pressure inside the reactor with atmospheric pressure, the brine penetrates even deeper into the porous structure of the product, and the product literally sinks before your eyes. This means the brine has fully entered the product.
Our technology allows you to infuse the desired flavors and aromas in an extremely short time.
One cycle takes just 2–3 minutes.
Throughput reaches 1300–1400 kg of dry input product per hour.
The second part of the unit is a dryer. Here, we dry the product back to the moisture level it had before the flavoring process.
